Udon Soup | Easy Noodle soup
I often make a double batch. |
It works with Udon Noodles, soba noodles or any other pasta you like.
Ingredients6 cups chicken broth (can be pereve)
¼ cup White Wine
¼ cup soy sauce
2 T sugar or splenda
½ lb salmon
1 cup bok choy
¼ cup mushrooms
Preparation
1. Wash and chop bok choy, cut mushrooms.
2. Add to broth with salmon, wine, soy sauce and sugar.
3. Bring to a boil and lower to simmer for 30 minutes.
4. Pour over noodles or add cooked noodles just prior to serving.
